Amazing! Out of this world! You have to try these no cook bars made with Cape Cod Beer Brittle!
20 Penaut Butter Sandwich Cookies
1/2 cup butter, melted
2 cups powdered sugar
1 1/3 cups creamy peanut butter
1/2 cup butter, softened
1/2 cup finely crushed Cape Cod Beer Brittle (1 package)
1 cup semi sweet chocolate chips
1/2 cup creamy peanut butter
1/2 cup coarsely crushed Cape Cod Beer Brittle (1 package)
Line a 13x9x2 pan with foil. Extending foil over edge of pan. Set aside.
In a food processor, add peanut butter cookies. Process until a fine crumb is formed. Add melted butter and process with several on/off pulses until just combined. Press crust/crumb mixture in bottom of prepared pan. Set aside.
In a large bowl beat powdered sugar and 1 1/3 cups peanut butter with softened butter with an electric mixer on low to medium speed until smooth. Stir in finely crushed Beer Brittle. (We crushed ours in the food processor once we have finished the crust above.) Mix until combined. Drop mixture by spoonfuls over crust, carefully spreading to an even layer.
In a heavy small saucepan, melt chocolate and 1/2 cup peanut butter over low heat stirring occasionally. Spread evenly over bars, and then sprinkle with coarsely crushed Beer Brittle. (We just banged our bag of brittle on the counter a couple times to coarsely crush.)
Cover and chill at least one hour or until set. (We chilled overnight) Using edge of foil, lift block of bars out of pan. Place on cutting board and cut into bars. According to the recipe it makes 48 bars. We cut ours pretty small as they are quite rich…and yummy! Store in Refrigerator, layering bars between sheets of wax paper in an airtight container. Store in frdge for up to 2 weeks.
