Flowers! Herbs! Plants! Springtime! All of those words describe the unique finesse of Pilot Batch #007, a traditional pilsner. This lager is clean, refreshing, with notes of bready malt and spicy hop aromas drawn from traditional German and Czech ingredients. What is truly unique about this beer is the process and range of techniques used to brew it. Lager brewing is always an exercise in patience. Lagers, in contrasts to ales, are produced using lager yeast which ferments at lower temperatures and takes much longer to ferment completely and to mature. After brewing, the wort is chilled to 50-55F, lager yeast is pitched, and primary fermentation begins. That lasts nearly 10 days before the beer is “crashed” to near freezing temperatures. This allows the remaining solids and yeast to settle to the bottom of the tank, creating a clear and bright beer that is ready for the “lagering” process. The German word, “Lager,” means “to store,” and lager beers are stored/matured at cold temperatures after leaving the fermentation vessel. This period can last anywhere from two weeks up to many months! When the maturation process is finished, the beer is carbonated and served just like any other beer.
